Vegetable Taco Pasta
A one-pot, super fast dish you can pull together in under an hour.
Ingredients:
- 250g Pasta, fusili works well
- 2 x bell peppers
- 1 x tin black beans
- 1 x tin sweetcorn
- 1 x courgette
- 1 x large white onion
- Fresh coriander
- 1 tsp Cumin
- 1 tsp Paprika
- 0.5 tsp Chilli powder
- 1 x jar of salsa
- Salt
- Cooking oil
- Lime slice and grated cheese to serve
Cook the pasta and place it to one side in a bowl when done. Add some oil to the single pot. Dice the onion and cook it in the oil until it becomes translucent. Chop the peppers and courgette and add those in. Cook these together for a few minutes. Add the cumin, paprika and chili powder and stir in well. Next add the black beans, sweetcorn, and the salsa. Stir and cook for another few minutes before adding the pasta back in and stirring all together. At the last minute add fresh coriander.
Serve in bowls with grated cheese and a slice of lime.
Swaps: Kidney beans or similar can be swapped in place of the black beans. Finely diced carrots can be swapped in place of the courgette. The dish can be bulked out with frozen peas too.
